We ask that parents plan holidays outside term time. The school cannot give ‘permission’ for holiday absences during term time.  Term 3 is a very busy term when standardized testing takes place. Children need to be in school for this. We strongly discourage parents from taking students on holidays during term time If a parent decides to take a child out of school for holidays, we request the parent to provide a letter to the school to say they are doing so and are aware of the implications. We remind parents of the educational and potential legal impact of removing

students from school for periods of time

Healthy recipe from PTA. Red lentils patties

1½ cups dried red lentils

½ onion — chopped

2 garlic cloves — chopped

1½ tablespoons chopped fresh flat-leaf parsley

1 teaspoon dried oregano

1 tablespoon tomato paste

1½ teaspoons salt

½ teaspoon freshly ground black pepper

4 tablespoons extra virgin olive oil

SOAK the red lentils for two hours in plenty of cold water, covered (the dried lentils will swell to around 3 cups worth of soaked lentils).

DRAIN the lentils well and place in a food processor or blender.

ADD the onion, garlic, parsley, oregano, tomato paste, salt and pepper.

PULSE until the ingredients are well combined and the mixture holds together, scraping the sides occasionally.

HEAT 2 tablespoons of olive oil in a large frying pan over medium heat.

FORM 24 golf ball-size spoonfuls of the mixture (about 1 heaped tablespoon each) and flatten slightly with the palm of your hand. COOK 12 of the patties for 4 minutes on each side.

REPEAT the process with the remaining 2 tablespoons of olive oil and 12 patties.

It's nice to serve with taztziki or tahini sauce.

Dates to remember:

27 of April, Friday – PTA COFFEE & Treat morning for parents

4th of May, Friday – LSP SPRING FAIR, PLANT and CAKE sale.

Yesterday 4th class went to the Lime Tree theatre and saw the MIC choir singing. We all enjoyed the Irish music and the puppet dancing. It was lovely to see all the local schools there. The Burren choir was also there. We would love to see them sing again & we joined in with some of the songs as we have learnt them in our own LSP choir. By Hazel Mitchell-Sarasola

Third Class trip to Curraghchase

On 12th April third class went to Curraghchase to go on a biodiversity hunt. There were 2 groups led by Ray & Sean. In Sean’s group we went pond dipping and bird watching. We saw a heron trying to attack a swan’s nest. It was a fun day. By Nathan

With Ray we did lots of really fun stuff, we went to the Lady of the Lake’s cottage & made necklaces of string and branch and even got to dip our heads in water!
